Cilantro opens Bennington location


BENNINGTON >> Cilantro's Bennington location opened its doors on Thursday, bringing a Mexican flavor to the downtown.

The original restaurant, which opened in 2010, continues to be a popular dining spot in Manchester. Owned by Cassidy and Brenna Warren, the counter-service restaurant offers burritos, tacos, and burrito bowls, all made from ingredients that are sourced locally when possible. The food is prepared as the customer watches.

The Bennington location will have a staff of about 10-15 moving forward, and is open 11:30 a.m. to 9 p.m., seven days a week. It is located across from the Bennington Police Department, at 201 South Street.

Cassidy Warren said on Friday that business so far has been "awesome," and that he's looking forward to the first weekend. Warren, who said he lives in between Bennington and Manchester, said that Bennington was an easy choice for the location of the newest Cilantro. "People were asking for it," he said, "and it just made a lot of sense."

Beside the Manchester restaurant, Cilantro also has a location in Winhall, which it refers to as "The Shack."

The opening of Cilantro on South Street represents the return of Mexican cuisine to Bennington, which lost its sole Mexican restaurant in 2014, with the closing of the Rattlesnake Cafe.

"Cilantro is more than a delicious herb," reads a blurb on the restaurant's website,, "It is more than a fast, casual restaurant in Manchester, Vt. It is so much more than the hard work and commitment we put into the restaurant every day. To us, and hopefully to all of our loyal customers, Cilantro is a step. A step towards a promise: To continue being sustainable, local, and committed to improving the prosperity of our wonderful town."
