Chef Dominic Amico heads The Red Slate, the signature restaurant at The Upper Pass Lodge (Opening Mid Spring 2013). Amico's mission is to use, promote and celebrate local sustainable foods. The Red Slate demonstrates its passion for local products by offering Quail, Pheasant, Rabbit, Trout, and Beefalo, raised locally within the community.
